Does it get any better than a build your own strawberry shortcake bar? Flaky, butttery biscuits, the juiciest, ripest red strawberries, light and fluffy whipped cream, blueberries bursting with fresh flavor, just a little bit of chocolate and some big glass jars is all it takes to make this shortcake bar a reality. I took this shortcake bar to a friends house this week (Did I mention that it's portable too?) and it was a big hit. It was fun to watch everyone at the party customize their shortcake dessert. Strawberry Shortcake Biscuits 1 cup all-purpose flour 1 cup cake flour 1 teaspoon granulated sugar 2 teaspoons baking powder ½ teaspoon baking soda ½ teaspoon salt ½ cup unsalted butter, chilled, cut into small pieces ¾ cup buttermilk
Use a 2 inch circle cutter to form biscuits. Place biscuits on a silpat lined baking sheet. Bake 10 minutes at 400. Place cooled biscuits in a jar or a basket. Slice each biscuit in half and assemble shortcakes. OR _ set up a build your own strawberry shortcake bar. I had a jar of biscuits, a bowl of strawberries, a bowl of blueberries, a bowl of whipped cream and some mini chocolate chips. I'm pretty sure these were as much fun to create as they were to eat. Everyone's shortcake came out differently but they were all beautiful. How can you go wrong with fresh fruit and homemade whipped cream? The best part about this shortcake bar is that you can get SUPER creative and add all kinds of other ingredients too. Peaches, blackberries, granola, nuts - the sky's the limit. A natural consequence of being a food blogger is that my friends get used to seeing me with my camera. On the rare occasions when I don't happen to have it with me - they ask me where I left it. They've come to accept the fact that they will not be able to eat a meal without waiting for the pictures to be taken first and they get accustomed to being photographed while chewing. For the most part, my family and closest friends are super tolerant of me sticking a camera in their face at the MOST awkward and inconvenient times. But they also have a way of letting me know when I get into picture overload. LOL Serves me right really --- that Ryan would turn the camera on me. Now I know exactly what it feels like to live with someone who is camera obsessed. Maybe he took my picture because he was concerned that I have far more food pictures on my computer than I have pictures of my children. hahaha (Life with a food blogger is not as glamorous as you might imagine - just ask my kids.) Just to be clear - the number of pictures that I store on my computer is NOT a direct reflection of the amount of love that I have for something or someone. Yesterday I took nearly 50 pictures of our dinner - and not a single picture of my family. :) So, without further delay - here are just a few of the flatbread pictures that I took yesterday. This warm grilled bread was REALLY good. It took a little bit of extra work but it was worth it. I prepared the dough a day in advance and then it took two people to bake it. (One to roll and one to grill.) This recipe makes 24 flatbread so we had PLENTY of leftovers to tuck into the freezer for future dinners. Grilled Flatbread 2 cups warm water 1 teaspoon yeast 1 cup warm milk 6 cups flour 2 teaspoons salt 2 teaspoons olive oil
Cut each dough half into 12 equal pieces. Shape each into a ball.
Use a fork to prick holes into the dough so that it doesn't puff up. (This is what happened when we didn't fork the dough.) Flip the dough once it's browned on the bottom and brown on the other side. Serve warm or reheat in the oven, wrapped in foil. We ate these flatbreads with marinated skirt steak and it was DELICIOUS. These would also be good with some fresh baba ghanoush or hummus or even as a thin crust pizza. I'm so glad that I have extra flatbread in the freezer. Enjoy.
Ciao! What's on your bucket list? I've been asking people this question to people that I meet lately and it turns out - you can find out a whole lot about a person with just that one simple question. Where are the places that they dream about visiting and what are the things that they long to achieve? One of the places on MY bucket list is ALASKA. And I'm super happy to announce that we are going to make that bucket list trip this summer! (I'm so excited I can hardly stand it.) Consider this your warning that the blog WILL be bombarded with Alaska pictures the minute that we return. :) Maybe it's just because I love to bake but I also have a baking bucket list. What's a baking bucket list you ask? A list of things that I want to bake but I'm afraid to try because I'm afraid that they're too complicated or simply because I don't feel qualified. One of the things on my baking bucket list is macaroons. I've had a fascination with macaroons for a long time. They're just the most perfect, delicate and delicious little treat. It's mostly a lack of confidence that's kept me from tackling this delicate treat. The list of ingredients isn't long and the instructions are fairly straightforward but for whatever reason - I was completely intimidated by the macaroon. Well, today is the day that I stepped up, made my first macaroon and crossed this tasty little treat off my baking bucket list. No more excuses. Spoiler alert - they turned out great!! Combine almond flour and powdered sugar. Fold into sugar mixture. Pipe filling into each of the circles on the parchment paper. Let sit on counter for 2 hours to dry. Bake 15-17 minutes in a 300 degree oven. Let cool completely. Fill with a dollop of whipped cream and some freshly sliced strawberries for the cutest strawberry shortcake macaroon ever. Ciao! There's just something about the fresh mozzarella, tomato and avocado combination that I find really irresistible. It doesn't matter if it's on a stick or on a piece of toasted flatbread or a cracker, on top of a pizza or a chicken breast - I just love that caprese flavor. Add a drizzle of thick and syrupy balsamic glaze and it's basically heaven on a plate. This is a perfect spring or summertime meal. Courtney ate hers sans tomato and avocado but it was her loss. Top with slices of tomato and avocado and basil strips. Drizzle with balsamic glaze. Enjoy. This dinner was so good and it was super fast. Ciao! I am a big fan of warm sandwiches. It doesn't matter if its a panini, a wrap or a sub sandwich from Subway, I prefer warm sandwiches over cold ones. Give me some warmed deli meat with a slice of melted cheese and some crisp vegetables and I'm a happy girl. I love a good panini but since I don't have (or really want to store) a panini maker, I have to get creative with my warm sandwiches at home. I created this yummy turkey melt panini in my waffle iron. It's a delicious hearty sandwich that is easy to make at home - and it's warm! Turkey Melt Panini 8 slices turkey bacon 3 Tablespoons mayonnaise 1 teaspoon dijon mustard 8 slices whole grain bread 4 slices colby jack cheese 8 apple slices 8 ounces deli turkey Preheat waffle iron. Cook bacon on stove until crispy. Combine mustard and mayonnaise in small bowl. Prepare remaining ingredients while bacon cooks.
Spray lightly with cooking spray and place on warmed waffle iron for a few minutes. Enjoy. I liked the crunch and tartness of the apple in my sandwich but the kids both thought it was a little "weird". Either way - this was a really good WARM sandwich.
