What do you get when you combine juicy tomatoes, ripe avocados, fresh cilantro, spicy jalapeno and garlic? Avocado Pico de Gallo of course. I love this combination of fresh ingredients and whether I eat it on a taco or with baked tortilla chips, I can't seem to get enough. It's especially good with grilled carne asada tacos. You will want to make at least 2 batches of Pico de Gallo to go with these tacos - trust me. Carne Asada Tacos with Avocado Pico de Gallo Lime juice form 2 limes 3 Tablespoons cilantro, chopped 1 pound skirt steak 1 Tablespoon jalapeño, diced 1 teaspoon cumin 1 teaspoon lime juice ½ teaspoon salt 1 garlic clove ½ teaspoon red pepper 1 medium avocado, diced 1 tomato, diced 8 corn tortillas
Warm each tortilla over gas flame and serve with steak and salsa. The meat looks really undercooked here but I know my mom will appreciate the rare beef. I ended up packing up this carne asada and taking it to a friend. I left him instructions to reheat the beef in a hot skillet which will give him the opportunity to cook it to his desired doneness.
These carne asada tacos are really good especially when you use really good skirt steak. Ciao!

Here's my theory: I think that someone was making gingerbread pancakes in the kitchen while they slept which gave them sweet dreams. I know I would dream of dancing sugarplums if I smelled gingerbread pancakes cooking on the stove while I was sleeping. Gingerbread Pancakes 1 3/4 cup flour 1/2 cup whole wheat flour 1/4 cup brown sugar 2 teaspoons baking powder 1 teaspoon ginger 1 teaspoon cinnamon 1/2 teaspoon baking soda 1/2 teaspoon salt 1/8 teaspoon nutmeg 2 eggs 1 1/2 cups buttermilk 1/3 cup molasses 3 Tablespoons canola oil
Lightly grease a skillet and heat to medium high heat. Scoop 1/4 cupfuls of batter onto hot skillet and cook until golden on both sides. Serve with maple syrup. So here is what my family had to say about these delicious pancakes. My daughter said they were "good" and she ate two. My son's comment was that they were "fine" - he only ate one. Both Ben and I really like the gingerbread pancakes and we finished the batch. The pancakes weren't the big hit with my kids that I thought they would be but I for one, thought they were great. Nothing like a batch of Gingerbread pancakes to get me into the Christmas spirit.
Ciao! When I was a kid, my mom made "eggs in nest." They were essentially, an egg cooked in the center of a piece of toast. I tried to recreate them for my family but was pretty unsuccessful. The egg was always overcooked or undercooked and the toast always ended up soggy. I recently found a recipe for these eggs in an issue of Cook's Country magazine. Place sheets on a wire rack and let sit 2 minutes until whites are completely set. My family was fascinated by what they called "levitating eggs." We ate way more "eggs in a hole" than I ever thought that we would. I had to go back and make a second batch because we all wanted more. Of course we all took turns levitating our eggs and discussing the science behind it made for great dinner conversation. Who knew that it would turn into a science lesson? Speaking of science lessons, does anyone know how to keep my spring bulbs from blooming in December? They're beautiful but I sure would like for them to wait until spring to bloom.

Since it's obvious that I have a lot of Reese's loving followers, I decided to blog yet another super scrumptious chocolate and peanut confection for you to sink your teeth into. If you liked the cupcakes, you will LOVE the cookies. This recipe for Reese's peanut butter cup cookies came from the Favorite Brand Name Cookie cookbook. Reese's Peanut Butter Cup Cookies 3/4 cup peanut butter 1/2 cup butter 1 cup brown sugar 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 egg 1 1/2 teaspoons vanilla 1 1/4 cups flour 2 cups miniature Reese's Peanut Butter Cups 1/4 cup melted chocolate
Cover with plastic wrap and refrigerate 1 hour. Scoop dough onto silpat lined baking sheets.
Drizzle cookies with melted chocolate. The little chunks of peanut butter cup inside the cookie are a nice surprise when biting into this decadent cookie. The drizzle of chocolate on top adds just the right balance of sweetness too.
Just a hint: I think Santa would REALLY enjoy finding one of these delicious treats under the tree on Christmas eve this year. Ciao! We spent an afternoon at the Georgia Aquarium last weekend . I know what you're thinking ... "here comes a fish recipe." Well, just to prove that I'm not ALWAYS predictable, I'm posting a chicken recipe today. Truth is that I really am that predictable and if I had a fish recipe ready to blog I would have posted it today but since I don't ... enjoy the chicken recipe. I'm sure that every one of us went through a chicken finger stage at one point in our lives. Some kids tend to linger in that stage longer than others however. (Like my daughter) She's fourteen now and she still loves chicken fingers. To appease both her need for chicken strips and my desire to feed her healthy food, I had her help me make a batch of homemade chicken fingers recently. I found a recipe for ranch chicken strips on blogchef.net and it combined three of her favorite things: cereal, chicken fingers and ranch dressing. (If I didn't know better, I would have thought they created this recipe with her in mind.) Ranch Chicken Strips 8 boneless skinless chicken breasts (sliced into strips) 1 cup corn flakes (crushed) ¾ cup grated Parmesan cheese ½ teaspoon garlic powder ½ teaspoon black pepper 1 (1 ounce) package hidden valley dry ranch dressing mix 1 cup milk 1 egg
My daughter ate her ranch chicken strips with a side of ranch dressing. (Seems appropriate don't you think?) Round up your kids and have them help you make dinner tonight. Just accept the fact that it's going to be messy and it's going to take you twice as long to fix dinner. If you can get over that now, you will have a much better time cooking with your kids.
