There is no question that I like to create new recipes and I just never know where the inspiration for my next new recipe will come from. Sometimes it's the most unlikely place - like the spice isle in the supermarket.
I went to the grocery store armed with a list of necessary ingredients to prepare a weeks worth of meals for my family. I was working my way through the aisles in the most efficient way possible while crossing things off my list when I got stuck in the baking aisle. (Imagine that!)
I was searching for pistachio extract (which I never found by the way) when I ran across this Zatarain's Blackened Seasoning. The first thing that came to my mind when I saw this was - Blackened Shrimp. I just couldn't resist straying from my list and putting this $2.18 can of Blackened Seasoning in my cart.
1 tablespoon extra virgin olive oil
12 large shrimp, deveined, tails removed
1-2 teaspoons blackening seasoning
4 cups spring mix (or your favorite lettuce)
¼ cup black beans, drained and rinsed
¼ cup grilled corn
red bell pepper
Heat oil in skillet. Season shrimp with blackened seasoning. Add to skillet and saute until cooked through.
Fill bowls with salad greens.
