1 pound skirt steak
2 Tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 large white onion
1/2 large lime
Combine oil, salt and pepper. Rub over steak. Cover with plastic wrap and refrigerate 1 hour.
Wrap onion in two layers of foil. Place onion on top of the hot coals in grill.
Place steak on grill and cook until desired doneness.
Remove steak from grill and let rest 20 minutes.
Quarter the onion and separate into pieces. Drizzle with lime juice.
Serve with sliced steak.
