How many consecutive days can I post apple recipes before I'm labelled a fanatic? 😉😬😅 I'm a little worried that I've become so obsessed with new apple recipes that my husband is going to block my credit card from any more apple purchases.🍎 He loves a good apple streusel and pie as much as the next guy but I feel like I may be reaching my limit.😂 I have no reasonable explanation for my recent apple obsession but I've decided to embrace it instead of analyzing it.🤣 Apple cake, apple pie, apple cider donuts, caramel apple crumb bars, apple gateau and possibly my favorite new apple recipe of all ... apple cider muffins. Forget the Pumpkin Spice trend - I'm here to start the Apple Spice revolution.🍎😂 Who's with me? You're getting a triple dose of apple in these the yummy little muffins. Shredded apple, reduced apple cider and applesauce all work together to give you that delicious burst of fresh apple flavor with each bite. 🍎 I used a Granny Smith apple for mine because that was what I had on hand but feel free to swap it out for your favorite apple variety in these tasty little treats. Apple Cider Muffins 3/4 cup apple cider 1 and 3/4 cups flour 1 teaspoon baking powder 1/2 teaspoon baking soda 3/4 teaspoon salt 2 teaspoons cinnamon 1/4 teaspoon ground allspice 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1/2 cup canola oil 1/2 cup brown sugar 1/2 cup sugar 2 large eggs, room temperature 1/4 cup unsweetened applesauce 1 and 1/2 cups peeled and shredded apple 3/4 cup chopped walnuts Topping 1/2 cup sugar 1 and 1/2 teaspoons cinnamon 3 Tablespoons butter, melted
Bake 5 minutes at 425. Reduce heat to 350 and bake another 15-18 minutes.
Dip muffin tops in cinnamon sugar mixture.
