These severe storms moving through Georgia today have me craving some serious comfort food. Rainy days = hearty, satisfying, cheesy sandwiches. Since I very rarely eat ground beef anymore, I assumed my days of eating sloppy joes was over. Boy was I wrong!! I'd like to introduce you to the most delicious ground turkey sloppy joe that I've ever tasted. With chopped kale, sliced mushrooms and swiss cheese - I think these non-traditional sloppy joes are even better than their tomato based ground beef counterparts. Turkey and Swiss Sloppy Joes 1 Tablespoon olive oil 12 ounces ground lean turkey breast 2 cups kale, sliced thin 1 cup chopped onion 1 Tablespoon chopped fresh thyme 1 teaspoon garlic powder 4 ounces cremini mushrooms, sliced 1 1/2 cups 2% milk 1 1 /2 Tablespoons flour 3/4 cup shredded Swiss cheese salt and pepper 4 whole wheat hamburger buns Hoping that all of my Georgia followers are safe from the storms. Turns out that sprinkling a little bit of Blackened Seasoning on a few shrimp is dinner perfection. I decided to put my blackened shrimp on a salad but I'm guessing that they would be equally delicious wrapped in a taco. Blackened Shrimp Salad 1 tablespoon extra virgin olive oil 12 large shrimp, deveined, tails removed 1-2 teaspoons blackening seasoning 4 cups spring mix (or your favorite lettuce) ¼ cup black beans, drained and rinsed ¼ cup grilled corn avocado sliced tomatoes red bell pepper black olives sliced mushrooms
Top with cooked shrimp, black beans, salsa, corn and avocado. Place shrimp on salad. These blackened shrimp would be delicious as a taco or even in a yummy soup. Give it a try and let me know how it turns out.
