Oatmeal Cookies 2.0

Our adventure through Capital Reef began like most national park trips I suspect.  We equipped ourselves with sunscreen, hiking boots, plenty of water, snacks and the irrational optimism of two people in their 50s who looked at a giant mountain and said - "why not?"🤷🏻‍♀️😂  Beaming with confidence that far exceeded our physical conditioning - we attacked this difficult trail during the hottest part of the afternoon.😬 🥵 

The thing I noticed about Capitol Reef is that it looks like Mars - if Mars had trees.🤪  Massive sandstone cliffs rise dramatically out of nowhere while the desert stretches endlessly in every direction. It’s stunning. It’s humbling. It’s also suspiciously hot before 9 a.m.😰

There are two kinds of people in this world: those who hike Utah's mighty 5 National Parks for the breathtaking red rock canyons and towering cliffs… and those who hike because someone promised them oatmeal cookies at the end. 😉  I'll admit that it was the amazing scenery that inspired me to set out on this hike initially but it was the promise of cookies that me going on hike back to the car.🍪 

These oatmeal cookies are amazing.  They're easy to make, they're delicious and they're packable for snacking on after long hikes.😉  Just a tip: having a few of these cookies will come in handy if you happen to go to Capital Reef because there is no food available in the park.  I recommend that you pack plenty of cookies, water, sunscreen and your most optimistic attitude.😂  

Oatmeal Cookies
1 cup flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ cup butter 
½ cup sugar
½ cup brown sugar
1 egg
1 1/2 teaspoons vanilla 
1 ½ cup old-fashioned oatmeal

Cream together butter and sugars. 

Beat in egg and vanilla. 

Slowly add dry ingredients.  

Scoop dough into balls and shape into disks. Place on silpat lined baking sheets.

Bake 20-22 minutes at 375.
