Peach Cobbler

I live in the South where if someone is even one minute older than you, it's required that you refer to them as sir or m'am.  We believe that Saturdays are for football and Sundays are for church.🏈⛪️  And we celebrate all life events, no matter how big or small, with something sweet. 🍭 

No Southern gathering is complete without homemade pie.  It doesn't matter if it's Thanksgiving day or Sunday supper, Southerns believe that a pie is required to complete the meal.🥧  Personally, I'm partial to fruity pies - raspberry, cherry or apple but I also wouldn't pass up a slice of chocolate pie either.

​I consider myself a Southern transplant but I do love the tradition of adding pie to all celebrations.  I also didn't get the pie baking gene that the other women in my family seems to possess.  I haven't given up on my quest to improve my pie baking skills but I'm way to vain to show up at a Southern gathering with a meager Amy pie. 🤣 

Lucky for me, I've discovered the cobbler option which seems to be an acceptable alternative to pie amongst most Southerners.😉  Cobbler is delicious and in my opinion, a much easier alternative for someone like me who struggles with pie dough.  All the flavors and traditions of a fruit pie without the fuss.  So if you're a cobbler fan - or if you struggle with pie dough like me - give this cobbler a try.  It's super tasty and it's DELICIOUS!! 🍑

Peach Cobbler
3.5–4 lbs fresh peaches, peeled and cut into 1 inch chunks (about 10 cups) 
1/4 cup brown sugar
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon salt

Biscuit Topping
2 cups flour
1/2 cup sugar
1 and 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, cold and cubed
1/2 cup buttermilk, cold

Egg Wash
1 large egg beaten
1 Tablespoon milk

Topping
2 Tablespoons sugar
1/2 teaspoon cinnamon

Mix together all filling ingredients.  
Spread into a greased 3-4 quart baking dish or 9x13" pan.

Bake 10 minutes at 350.  
Combine flour, sugar, baking powder, baking soda and salt for biscuits in bowl of food processor.

Cut in butter until mixture is crumbly and pea sized.
Add buttermilk and pulse until just combined.

Flatten dough by the handful and place over warm peach filling. 
Mix together egg wash and brush over biscuit dough.

Sprinkle with cinnamon sugar topping and bake 40-50 minutes.

Serve with vanilla ice cream.
