Peanut Butter S'mores Bars

Last weekend we went bananas!! 🍌  And by that I mean that we drove to Charlotte to see a Savannah Bananas game.😂  I just can't say this enough - if you get the chance to experience what the Savannah Bananas call Banana Ball - take it.  You will not regret it. ⚾️🍌

I don't know how to accurately describe the Savannah Bananas show but safe to say that it's an experience that you won't soon forget.   Every year we enter the ticket lottery and this year we managed to snag enough tickets to invite 13 fellow fans to go to the game along with us.  I highly recommend going to a Savannah Bananas game with your besties - you won't regret it. 🤣⚾️🧢

Peanut Butter S'mores Bars have absolutely nothing to do with baseball or bananas or even what we ate this weekend so I won't even try and make a connection between the two.  Let's just say that I love these as much as I love the Savannah Bananas and leave it at that. 😅

If you're a Reese's Peanut Butter Cup fan or a S'mores lover - this recipe is for you. 🍫🥜 Adding a layer of peanut butter to a traditional s'more and preparing this dessert in a loaf pan is pure genius.  These peanut butter s'mores bars are less messy to make AND eat. Win win. And they're delicious so what more do you need to know? 😅

Peanut Butter S'mores Bars
1 cup creamy peanut butter
1/3 cup honey
1 teaspoon vanilla
6 whole graham cracker sheets
1 1/2 cups old fashioned oats
1/2 teaspoon sea salt
1 cup chocolate chips
1 Tablespoon coconut oil
1/2 cup marshmallow creme

Fit a loaf pan with parchment paper. 
Process 4 graham cracker sheets in food processor until crumbly.

Stir together peanut butter, honey and vanilla. 
Stir in graham cracker crumbs, oats and salt.

Press half of mixture into loaf pan.  Spread marshmallow over oat layer. ​
Melt chocolate and coconut oil in microwave.

Spread half of chocolate over marshmallow layer.  
Crumble one of the remaining graham crackers over chocolate layer.

Gently press remaining oat mixture over chocolate layer. 
Spread remaining chocolate over oats.

Crumble last graham cracker over chocolate.  Cover and refrigerate 3 hours.
