Vacations are great for everything but my waistline.😅 When I plan a trip - before I make any hotel or rental car reservations - I do extensive research to find the very best foods that I absolutely need to taste in each city.😋 Clearly my priority is food. My goal is to taste as much of the local fare as I possibly can - even if that means indulging in things that aren't part of my normal diet.😅 (Cue the sticky toffee pudding!🥮 ) Sampling the fish and chips at an English pub was high on my priority list during trip to London but of course that wasn't the only food that I was looking forward to sampling. This fun city had me eating the most delicious pasta carbonara and tuna nicoise salad that I've ever tasted. Not to mention the countless samples of gelato from local gelaterias. And since a trip to England wouldn't be complete without indulging in high tea with decadent scones and pastries - I tried them all. Who knew that I'd be a clotted cream and scone fan?😅 Without question though, the highlight of our four tour of London was the warm, melted chocolate poured over a cup of fresh strawberries at the bustling Borough Market.🍫🍓 The food in London far exceeded my expectations. I definitely overindulged though so now it's time to get back to my usual diet with an emphasis on low fat protein and lots of greens and vegetables. But.... I'm still craving those tasty meals we had on vacation so Salmon Superfood Salad it is. It's healthy but it's also delicious. Salmon Superfood Salad 2 salmon fillets 1 Tablespoon olive oil 4 cups romaine 1 sweet potato, peeled and cubed ½ avocado, sliced 2 Tablespoons sliced red onions ¼ cup shaved parmesan 2 Tablespoons pepitas Lemon vinaigrette dressing ¼ cup apple cider vinegar 2 Tablespoons fresh lemon juice 2 Tablespoons water 1 Tablespoon dijon mustard 3 teaspoons honey 1 teaspoon dried oregano 1 clove garlic, minced ½ teaspoon sea salt ¼ teaspoon black pepper ½ cup + 2 Tablespoons olive oil Spread sweet potato on foil lined baking sheet and drizzle with olive oil. Bake 15-20 minutes at 450 or until crispy and browned.
Top with salmon toss with dressing and serve.
