It's hard to believe that it's been 3 years since our trip to Greece. It was easily one of the most beautiful places that I've ever visited. The architecture, the history, the people, the food --- all of it - incredible. It took less than 24 hours for us both to fall completely in love with this remarkable country. We actually started planning our next trip to the Greek islands while we were still in Greece.🇬🇷 😂 Sunset was my favorite time of day in Santorini. It's such a beautiful place and we definitely want to go back and explore even more of the islands in Greece. There's just so much to see and despite my best efforts we didn't have enough time to fit it all in. 🤣🏃🏻♀️ The highlight of our trip was a fishing trip on the Aegean Sea. It's hard to beat the experience of eating our fresh catch right on the boat, just minutes after we reeled it in. I will be the first to admit that I when I went to Greece - I was not a feta eater. I had a complicated relationship with the Greek cheese. Hate is too strong a word for my feelings about feta - but when given the option - I would normally opt out of having feta added to my meal. But I tried to keep an open mind and when I went to Greece and good thing I did because it turns out - I actually do like feta.😅🙃 I would still put my relationship with feta in the "it's complicated" category because most of the Greek feta that I can buy here tastes different than the feta that I ate in Greece. But I did learn that there is some feta that I do enjoy eating. I also learned that I like tzatziki while visiting Santorini. I had tried it on several occasions before our trip and I was never blown away by the creamy yogurt sauce. That was before I was taught how to make real, authentic tzatziki in a cafe kitchen in Greece. All it took was one Greek cooking lesson and I came home inspired to make Mediterranean meals for the rest of my life.😅 Tzatziki Marinated Salmon Kebabs 1/2 cup tzatziki sauce 2 teaspoons lemon zest 1 Tablespoon lemon juice 1 pound salmon, cut into 1" cubes 1 Tablespoon olive oil 1 Tablespoon oregano 2 cloves garlic, minced 1 orange bell pepper, cut into 1 1/2" pieces 1 cup grape tomatoes 1/2 medium red onion, cut into wedges
Grill kebabs until cooked through. Until next time Greece.
