Vanilla Cupcakes 2.0

Between the months of March and June we celebrate 90% of our family birthdays.  Throw in Mother's Day, Father's Day, Easter and a few anniversaries it feels like we've got something to celebrating every weekend.🎂  No complaints from me - in this house we mark every birthday, graduation, anniversary and significant accomplishment with food and food is my love language. 😅🍰  So Happy Everything - party on!

Since I'm the primary organizer of all commemorative brunches, special dinners and the baker of nearly all celebratory desserts, it goes without saying that Spring is a busy time of year for me.🍰  Just curious: What do you think is a normal amount of butter for someone to use in a single month?😂🧈  I went though more than 35 pounds of butter last month.😬😳  Just to be clear, not ALL of that was consumed by my family - some of that went to catering orders. 😅

A couple of weeks ago, I made 14 dozen cupcakes in an assortment of flavors for an event.  I make a lot of different cupcake flavors but vanilla cupcakes are by far the most requested flavor.  I've made them for birthdays, engagement and graduation parties, weddings.  It's a classic flavor that everyone loves.

Just a warning:  When you master the perfect vanilla cupcake and you too, can earn the distinct honor of being named celebratory baker for your family too.🧁  ​

Vanilla Cupcakes
1 cup sugar
1 3/4 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, room temperature
2 eggs, room temperature
1/3 cup sour cream
1/4 cup canola oil 
1 1/2 Tablespoons vanilla 
2/3 cup whole milk, room temperature

Mix together cake flour, baking powder, baking soda, sugar and salt in bowl of standing mixer.
Add butter and mix until fine and crumbly.

Whisk together milk, eggs, sour cream, oil, and vanilla until smooth.
Add the egg mixture to the flour mixture and beat until just combined.

Fill cupcake liners just over 1/2 full.
Bake 14 minutes at 350.

One batch makes 20 cupcakes.

Everything that comes out of your kitchen is delicious, beautiful and perfect for any celebration.
However, Amy, your love language is killing me. Between all of the family celebrations and your "love language" I have gained 5 lb. this month.
