White Bean and Sun Dried Tomato Burgers

Happy Labor Day!!
Labor Day cookouts are a classic way to celebrate the end of summer with good food, friends, and family.  Burgers, hot dogs, beer can chicken - all great options for this weekends menu.🍔🌭🍗  White Bean and Sun Dried Tomato Burgers - not the obvious choice.😅  This is more of an anti-burger recipe.😅

I'm not a beef eater so I've been experimenting in the world of alternative burgers for a while now.🍔  I actually really enjoy bean burgers and I feel like they can actually be even more flavorful than beef burgers sometimes.  The only problem is that so many of bean burgers sold in grocery stores and restaurants are full of fillers and processed ingredients.  I decided that the best way to control what goes into my burger - is to make it myself. 😉

These White Bean and Sun Dried Tomato Burgers are made with some of my favorite ingredients - basil, sun dried tomatoes and cannellini beans.🪴🍅🫘  How could this scrumptious flavor combination be bad?  Well, the flavors of this burger are really delicious - the texture - not so appealing. 😕

I'm not a food scientist and other than the obvious, I cannot explain the difference between a black bean and white bean but I can tell you that white bean burgers do not have the same consistency as a black bean burger.😬🤷🏻‍♀️   These burgers, although tasty, had a slightly off-putting, paste-like consistency.  I didn't mind it as much as my family did but I think that if I make them again, I'll swap the white beans for black ones.

White Bean and Sun Dried Tomato Burgers
1/2 cup mayonnaise
1/2 cup fresh basil
1/3 cup oil packed sun dried tomatoes, chopped + 2 Tablespoons packing oil
2 cloves garlic, minced
3/4 teaspoon salt
2 cans (15 ounces) cannellini beans, rinsed and dried
1 egg
2/3 cup panko 
2 Tablespoons olive oil
4 hamburger buns

Combine mayonnaise, 1/4 c. basil, 1 T. tomato oil, 1 clove garlic and 1/4 t. salt.
Mash 1/2 of the beans with potato masher.  Add remaining beans and mash until partially broken down.

Whisk together 1 egg, 1 T. tomato oil, 1 clove garlic and 1/2 t. salt.  
Stir egg mixture, panko, tomatoes and 1/4 c. basil into bean mixture.

Divide mixture into 4 equal portions and shape each into a patty. 
Refrigerate patties 10 minutes.  Heat oil in skillet.  Add patties and cook through.

Spread mayonnaise mixture on one side of buns and place burgers on top.
