I can remember making Chex mix at home when I was a kid. I know I am showing my age now but when I was a kid, we HAD to make our own Chex mix. We couldn't go the store and buy a bag of premade mix. If we wanted Chex mix, we went to the grocery store, bought a box of cereal, a bag of pretzels and a can of peanuts and brought them home and put together your own snack mix. We used to bake it in the oven - "stirring it every 10 minutes to prevent burning." Then came the microwave version that only needed to be stirred once throughout the cooking time. Shortly after that, bags of Chex mix were stocked in every grocery store, gas station and convenience store across America. I for one, am not a fan of the bagged Chex Mix. Call me old school but if I'm going to indulge in a handful of Chex Mix, I want the original, - baked in the oven - stirred every 10 minute - version of the snack. This is my take on the original Chex Mix recipe. (Another benefit of making it at home.) Chex Mix 1/2 cup (1 stick) butter, melted 3 tablespoons Worcestershire sauce or soy sauce 1 1/2 teaspoons seasoned salt 1 cup peanuts 6 cups corn squares cereal 2 cups small pretzel shapes, such as twists or rings Place remaining ingredients in large bowl. Add butter mixture; toss until evenly coated. Spread evenly on two 15x10x1-inch baking pans. Bake 45 minutes, stirring halfway through cook time. Cool completely on wire rack. Store in airtight container. Portion into baggies. Is there anyone else out there who still makes their own Chex Mix at home or am I the only one?

Key lime pie lover? I have got something that you are going to love even more than pie - key lime pie cupcakes! I couldn't really decided whether they needed toasted meringue frosting or cream cheese frosting so I did it both ways. You can decide for yourself, which way is better. I modified a vanilla cupcake recipe to make these yummy key lime flavored treats. Key Lime Pie Cupcakes 1 1/2 cups flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 3/4 cup butter 6 Tablespoons butter 1 egg plus 1 egg white 10 key limes, juiced 1/2 cup whole milk green food coloring 1/2 cup crushed graham crackers 3 Tablespoons melted butter 2 Tablespoons sugar
Beat in key lime juice. (I found a bag of key limes at Wal Mart - not the best looking key limes but I was pretty surprised that they even had them.)
Bake 18 minutes at 350. These were the ones that I topped with my meringue frosting. And then I whipped up a batch of cream cheese frosting. So the question is ... will you try them with toasted meringue frosting or cream cheese frosting? Send me a comment and let me know.
Ciao! This may not be a traditional looking wedding cake but it may just be the most delicious wedding cake that I've ever made. The bride and groom that I created this special cake for requested a red velvet cake with cream cheese icing. Period. I wanted to create a cake that was not only delicious but also represented the theme of the wedding, the newly married couple and their newly formed family. I used white chocolate to create simple leaves to vine up around the cake. I also made a chocolate peanut butter nest out of chow mein noodles to adorn the top of the cake and inside the nest - gum paste bride and groom birds and six tiny baby birds. (One for each of the children in this precious family.) The cake turned out really cute but even more importantly, it was delicious! Red Velvet Cake 2 ¼ cups flour 1 ½ teaspoons baking soda pinch salt 1 cup buttermilk 1 Tablespoon white vinegar 1 teaspoon vanilla 2 eggs 2 Tablespoons cocoa 1 ounce bottle red food coloring 12 Tablespoons butter 1 ½ cup sugar Beat butter and sugar on medium speed in mixer for 2 minutes.
Frosting 16 Tablespoons butter 16 ounces cream cheese 1 1/2 teaspoons vanilla 4 cups powdered sugar 3 Tablespoons heavy whipping cream pinch salt Combine ingredients in mixing bowl and blend until smooth.
Non traditional wedding cakes are becoming more popular all the time. I think I like this trend.
Ciao! I love a great veggie pizza. A thin whole wheat crust loaded with chunks of roasted vegetables and a hint of Parmesan cheese might just be a perfect meal. I came up with my own portable version of the classic veggie pizza last month so that I could eat it during halftime of a soccer game. Roasted Vegetable Calzone 1 recipe whole wheat pizza dough 1 small eggplant 1 medium zucchini 1 large red pepper 1 cup baby bella mushrooms 1/4 cup sliced onion 2 Tablespoons olive oil 1 teaspoon fresh Parmesan cheese salt and pepper
Bake 15 minutes at 400.

Ciao! Sunday nights are a special time at our house. We're always trying to squeeze in just a little more fun in those last few weekend hours. Even as a kid, I can remember dreading the moment when the sun went down on Sunday night because that meant that the weekend was over. Now that I'm an adult, I find myself even more disappointed to see the Sunday night sunset. Sunday evenings are typically our time to reconnect and catch up with each other and I certainly don't want to miss out on family time while I'm off cooking dinner. That is exactly how our long standing tradition of Sunday "breakfast for dinner" got started. It was quicker for me to put together a simple breakfast meal than it was for me to get a big dinner on the table. Egg Pizza 2 cups flour 2 cups cheddar, shredded 2 ½ teaspoons baking powder ¾ cup milk 2 teaspoons sugar 2 Tablespoons milk ½ teaspoon salt 6 eggs, beaten ¼ cup butter sausage or bacon
Bake 5 minutes. A cheesy biscuit-like crust topped with buttery scrambled eggs and salty bacon? - yes please! Dinner is served.
