Summer is here which means that I get extra help in the kitchen with dinner. Each of the kids choose (or sometimes, they get assigned) one night a week to prepare dinner. It is up to them to come up with a menu and get me a list of ingredients at least a day in advance so that I can get to the grocery store to pick up all the necessary supplies. (They usually come up with very creative menu ideas.) My daughter's very first meal of the summer was turkey parmesan meatball subs. The recipe came from iowagirleats.com and it was originally called chicken meatball parmesan subs. But, for the second time in two weeks, I went to the supermarket in search of ground chicken and I couldn't find any!? Not sure what is going on with the ground chicken supply but I have been substituting ground turkey instead. Turkey Parmesan Meatball Subs 1 small zucchini, grated 2 garlic cloves minced 1lb 99% fat-free ground chicken breast 1/2 cup panko bread crumbs 1/3 cup grated parmesan cheese 1 egg 1/2 teaspoon dried basil 1/2 teaspoon salt 1/2 teaspoon pepper Hoagie rolls or hot dog buns 4oz mozzarella cheese, sliced 3/4 cup marinara sauce, warmed Preheat oven to 400 degrees then spray a baking sheet with nonstick spray and set aside. Grate zucchini and garlic in cuisinart. Transfer to a bowl along with remaining ingredients and mix with hands.
I would say that her first dinner of the summer was a success. It was delicious. As an added bonus, I think she learned a new recipe that she could make independently next time. Ciao!

Self serve frozen yogurt shops have popped up on nearly every corner in Atlanta. They seem to be the hottest trend lately and they probably rival Starbucks for most number of shops per square mile. Personally, I love the whole self serve concept. I get to sample the flavors before I make my selection and then I control the amount of yogurt that I want to eat because I put it into my bowl myself. The choice of toppings varies from store to store but typically there is fresh fruit, candies, chocolate chips, sprinkles and cereal. I've even seen crumbled bacon as a topping! I decided to officially jump on the frozen yogurt bandwagon and try my hand at homemade frozen yogurt. Before you get too excited, I feel I should warn you that my first attempt at homemade frozen yogurt was underwhelming. I found a recipe for frozen yogurt in my Good and Fresh magazine. I was pretty sure that I could come close to the delicious soft serve frozen yogurt that I get in the stores. Frozen Yogurt 3 cups plain low-fat yogurt 1 cup sugar 1 teaspoon freshly squeezed lemon juice 2 teaspoons vanilla salt Combine yogurt, sugar, lemon juice, vanilla and salt. After a few hours of chill time, I took the frozen yogurt out of the freezer and scooped it into my bowl. So, my frozen yogurt needs some tweaking. First of all, it was waaaaay to sour. I think that maybe the recipe was printed wrong and it should have said 1/4 teaspoon instead of 1/4 CUP of lemon juice. The yogurt itself had enough tartness and it really didn't need much more acid added to it. I also made the mistake of not chopping my mint fine enough. I liked the flavor of the chocolate mint but big pieces of mint leaves in my yogurt - not so great.
All in all, my first attempt at frozen yogurt wasn't a total disaster though. I ate most of it, mainly because I didn't want to waste a perfectly good dark chocoalte Cabdury bar just because it happened to be mixed with super tart yogurt. For now, I am going to stick to the self serve yogurt shops. If you have a good recipe for frozen yogurt that you think I should try, send it to me. I'm not giving up my quest for homemade frozen yogurt yet. Ciao! What ever happened to the sweet little biscoff cookies that they used to hand out on airplanes? I used to look forward to my little double pack of biscoff cookies when I would get on a plane and all of a sudden it seems they have been replaced with miniature bags of mini pretzels. Seriously? That is a terrible trade off.
I found this recipe for No Bake Biscoff Granola Bars on Pinterest. It came from twopeasandtheirpod.com. (I love their recipes.) As soon as I brought the cookies and the spread home from the grocery store, the kids were asking if they could have some. I had to get these bars made quickly before all of my ingredients got eaten up. Biscoff Granola Bars 1/4 cup unsalted butter 1/4 cup brown sugar 1/4 cup honey 1/4 cup Biscoff Spread 1 teaspoon vanilla extract 2 cups quick oats 1 cup crispy rice cereal 1/3 cup chopped Biscoff Cookies 1/4 cup mini chocolate chips Cut out an 8 x 8 inch square of parchment paper. Place the parchment paper in the bottom of an 8 x 8 inch baking pan.
Stir in the oats, crispy cereal, and Biscoff Cookies.

Just what you need to spice up (and lighten up) your 4th of July meal. Caprese Chicken Burgers 1 sun-ripened tomato, sliced into 4 pieces 4 fresh basil leaves 4 hamburger buns 1 1lb (454 g) boneless, skinless chicken, ground 1 egg 1 tablespoon (15 mL) water 1/2 small onion, grated 2 garlic cloves, minced 1/3 cup (75 mL) grated Parmesan cheese 1/4 cup (50 mL) dry bread crumbs 2 tablespoons(25 mL) chopped fresh basil 2 tablespoons(25 mL) oil packed sun dried tomatoes, finely chopped 1/4 teaspoon (1 mL) salt and pepper
Place patties on greased grill over medium heat; close lid and grill. Turn over. Grill until digital thermometer inserted sideways into center reads 165°F (74°C), 10 to 12 minutes. These burgers are really good. If you can't find ground chicken - substitute ground turkey. Enjoy your 4th of July!
