Any rocky road ice cream fans out there? Chocolate, marshmallow, walnuts and chocolate chips all swirled together into one sweet treat. I recently decided to transform this ice cream treat into a delicious chocolatey cupcake. (Just when you thought I had made all the different cupcake flavors that there were to make - I know what your thinking.) Rocky Road Cupcakes 1 cup flour 1 cup + 2 Tablespoons sugar 1/3 cup + 2 Tablespoons cocoa powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter, melted 2 eggs 1 teaspoon vanilla 1/2 cup strong prepared coffee 1/2 cup marshmallow fluff dark chocolate buttercream 2 Tablespoons mini marshmallows 2 Tablespoons mini chocolate chips 2 Tablespoons chopped walnuts
Divide batter between 6 jumbo cupcake liners or 12 regular sized cupcake liners. Bake 18 minutes at 350 for regular size cupcakes. (22 minutes for jumbo) Cool cupcakes on wire rack. Cut a hole in the center of each cupcake and fill with marshmallow fluff. Top with a swirl of chocolate buttercream and sprinkle with walnuts, chocolate chips and marshmallows. These cupcakes are the reason that I've had to add 30 minutes to my morning workouts. (They are totally worth it by the way.) I hope that you will love them as much as I do.

Both of my kids are super busy working this summer, (who's idea was a summer job anyway?) I have to take advantage of every opportunity that they're home during the next couple of months. I had them both home for an afternoon a couple of weeks ago so I dropped everything, loaded up the kayaks and spent the day kayaking on the lake with the kids. We had a blast on the lake but after 3 hours of kayaking in the sun - I was exhausted, sunburnt and starving. What better way to refuel after a day on the lake than with calzones? I found the inspiration for this recipe in my Cooking Light magazine. My whole family liked these calzones and not just because we were starving - because they really are awesome. And if your family likes things a little spicier, it would be super easy to spice these up with a little red pepper too. Chicken Broccoli Ranch Calzones 1 recipe pizza dough 1/3 cup buttermilk 1 Tablespoon dried chives 2 Tablespoons light mayonnaise 1/2 teaspoon dried dill 1 Tablespoon apple cider vinegar 1/2 teaspoon pepper 1/4 teaspoon salt 1 clove garlic, minced 1 cups broccoli florets 1 1/2 cups cooked chicken 1 cup colby jack cheese, shredded 1 egg, beaten
Combine chicken, broccoli, ranch and cheese.
Bake 10 minutes at 450. Brush with beaten egg and bake another 10 minutes. I served my calzones with a simple green salad. Chances are you won't but If you do have leftover calzones, wrap them in plastic wrap and then in foil and tuck them in the freezer for another day. They make great lunches or quick dinners for busy nights. As for the kayak trip, I thought I would share a few of my pictures from the afternoon. A day spent with these two makes me one happy mom. Ciao! Guess where we just got back from? ALASKA! I am so excited to share all of your pictures from this once in a lifetime trip with all of you but it's going to take me a couple of days to get them organized in between catching up laundry and grocery shopping. I don't want to give you the details of the trip until I have the pictures ready to show you because let's face it - the pictures really tell the story of Alaska. Without giving away any critical details and ruining the surprise of the Alaska blog post, I will tell you that we consumed LOTS of fresh salmon on our vacation. No salmon can really even compare to eating fresh Alaskan salmon IN ALASKA. (I'm already going through fresh salmon withdrawal.) But, when I'm in Georgia - I can do the next best thing - head to the grocery store to buy fresh salmon instead of the docks. Roasted Salmon with White Wine Couscous 1 Tablespoon plain greek yogurt 1 teaspoon chopped chives 2 Tablespoons + 1 teaspoon olive oil 1 Tablespoon + 1 teaspoon lemon juice 4 salmon filets 1 teaspoon salt 1/2 teaspoon pepper 2 carrots, thinly sliced 2 Tablespoons chopped onion 1 garlic clove, minced 1 cup water 1/3 cup white wine 1 cup hot couscous
Heat 1 T. oil in saucepan. Add carrots, onion and garlic. Cook until softened. Add 1 Tablespoon lemon juice, salt, pepper, water and wine. Bring to a boil. Stir in couscous, turn off heat, cover and let stand 5 minutes. Remove salmon from oven and squeeze remaining lemon over fish. Serve with a dollop of yogurt sauce and a side of white wine couscous. This meal was delicious and I'm pretty sure that it would have tasted even better if we had eaten it while looking out over the Alaska sea shore. Can you tell that I'm already missing the beautiful Alaskan scenery?

There are just too many fun things to do in the summer that our dinner plans tend to take a back seat. Spontaneous trips to the pool, last minute kayak trips, ice cream runs or hiking trips - those are the things that make summer great. Sandwiches are the way to go for my family this summer. They are easy to make and most importantly - packable. I can put together a quick picnic and we can head off on another summer adventure. Friday night we met some friends in downtown Monroe for a live concert. (You know you live in a small town when they block off the streets, set up a stage at the end of it, sell popcorn and snow cones and everyone sets up their lawn chairs in the street so they can listen to the band.) Love my little Georgia town. It was a lot of fun and even though some of us ate dinner at home, I ended up taking a couple of sandwiches to the concert for the rest of my family who met up at the concert. These Carne Asada Steak Sandwiches are the way to go for a delicious summertime meal on the go. Carne Asada Steak Sandwiches 1 pound skirt steak 1 teaspoon cumin 3/4 teaspoon chili powder 1/4 teaspoon salt 1/4 cup mayonnaise 2 Tablespoons fresh cilantro, chopped 1/2 teaspoon lime zest 1 Tablespoon lime juice 1 clove garlic, mined 4 baguettes, sliced in half 1 avocado
Slice avocado and place on one half of baguette. Spread lime mayonnaise sauce over other half of baguette. Place sliced steak on sandwich. Enjoy. To my surprise, my WHOLE family gobbled these sandwiches up in no time. They were a big hit. Even my pickiest eaters were big fans - without the lime cilantro mayonnaise of course. These are definitely going to be a repeat meal on our summer menu.
Ciao! Smoked turkey on the Big Green Egg has got to be one of my very favorite meals. I normally smoke a whole turkey but I recently found a recipe using 2 split turkey breasts which is a little more manageable than a whole bird. This is a recipe that you have got to try for yourself. The turkey is super tasty as a sandwich, it adds a delicious boost of protein to a healthy green salad and it's fabulous on it's own. Pulled Turkey Sandwiches 2 turkey breasts 2 cups wood chips 1/2 teaspoon cayenne pepper 4 Tablespoons butter Sauce 1/2 cup mayonnaise 1/3 cup cider vinegar 1 Tablespoon horseradish 1 1/2 teaspoons salt 1 garlic clove, minced 1 teaspoon pepper 1/4 teaspoon cayenne
Remove from heat, cover with foil and let rest 20 minutes. Transfer to a cutting board and shred turkey with hands. Add 1/2 cup juices from pan to turkey. Serve shredded turkey on whole wheat buns with the white barbecue sauce. Or, if you prefer to save on carbs - skip the bun. You can even boost the vegetable factor and serve the turkey over a be of lettuce. The four of us had LOTS of turkey for dinner and we still had plenty left over for lunches the rest of the week. I'm already thinking about my lunch this afternoon. Will it be a turkey sandwich or a turkey salad? Ahhhhh, the possibilities.
