I haven't posted pictures of my crazy dog in a while and believe me it's not because she's suddenly turned into a "normal" dog. She's definitely been displaying her usual neurosis - rock eating, chipmunk chasing and UPS truck racing. But, she's recently added an even more unusual habit to her list of neurosis - lizard stalker!
She and this lizard stood nose to nose the other day for a solid 5 minutes. I'm pretty sure they were checking each other out because neither of them moved a muscle for a very long time. They followed this Mexican stand off with an extensive game of hide and seek. (The lizard did all of the hiding by the way.)
4 skinless chicken thighs
1 Tablespoon oil
salt and pepper
1/2 onion, sliced thin
2 garlic cloves, minced
1 teaspoon cumin
14.5 ounce can fire roasted tomatoes
1/2 cup chicken broth
8 corn tortillas
queso fresco cheese
Season chicken thighs with salt and pepper.
Heat oil in skillet. Add chicken and brown on each side.
Add garlic and cumin and cook 1 minute.
Add tomatoes and chicken broth.
Bring mixture to a boil. Reduce heat, add chicken thighs and cook until temperature of chicken reaches 180.
Remove chicken from pan. Pour sauce into blender and process until smooth.
