Snow Day!!! The snow is falling and school is cancelled! Let the snow day festivities begin. It's been a couple of years since we've had snow in Atlanta so (almost) everyone was super excited about the snow. Before the grass was even covered, snowballs were flying and snowmen were being constructed. I even ran outside with my camera to get a few pictures of our snow covered house. Mia loves the snow too - can you tell? It is so fun to see everything covered in snow. The cold weather and snow had me in the mood for a nice warm meal last night. As luck would have it, crock pot brown sugar balsamic glazed pork tenderloin was on the menu for he snowy night. I put the pork in the crock pot in the morning and the aroma of the roasting pork filled the house all afternoon. By the time we were ready to sit down for dinner, I could hardly wait to taste it. This recipe came from laurasweetspot.com. Crock Pot Brown Sugar Balsamic Glazed Pork Tenderloin Ingredients
Mix together the seasonings: sage, salt, pepper and garlic. Rub over tenderloin. Place ½ cup water in slow cooker; place tenderloin in slow cooker. 1 hour before the roast is finished, mix together the ingredients for the glaze in a small sauce pan: brown sugar, cornstarch, balsamic vinegar, water, soy sauce. Heat over medium and stir until mixture thickens, about 4 minutes. Place pork on aluminum lined sheet pan, glaze, and set under broiler for 1-2 minutes until bubbly and caramelized. Repeat 2 to 3 more times until desired crust is achieved. Serve with remaining glaze on the side. This pork tasted exceptionally good because it was exactly what I was craving on a snowy winter night. The glaze was perfect and the pork was super tender. I loved it and apparently I wasn't alone because my family gobbled it up too.

Three soccer games this week and four games next week for Courtney. I LOVE cheering on my favorite player but having seven games in two weeks is throwing a kink into my schedule - not to mention my dinner planning. Packing up meals to eat at the soccer field isn't always the easy. I've learned the hard way that there are some meals that are best eaten at home and were never meant to be packed and eaten in the stands of a soccer stadium. :) I recently discovered a new recipe for a high protein, energy packed meal to fuel my soccer player - and her parents. This recipe is super easier to throw together at the last minute as I'm running out the door to try and make it to the game on time. Since the slow cooker does most of the work - there is very little hands on time for this yummy dinner. Slow Cooker Chicken Taquitos
Remove chicken from slow cooker and shred with 2 forks. Stir in cheddar cheese. Place 1/4 cup chicken mixture onto each tortilla. Roll, wrap in foil and bake 10 minutes at 350. Serve warm. I have to admit that I was a little nervous about cooking chicken breasts in the slow cooker. I was afraid it would dry out and not shred nicely but quite the opposite was true. This chicken was SUPER tender and delicious and shred perfectly. I love the simple recipe and the very limited hands-on time. We gobbled these taquitos up in no time. With a soccer schedule like Courtney has, we will be having these taquitos at another game soon.
Ciao! My Ben grew up eating pot roast and even though I know that I won't ever be able to replicate his mom's pot roast - I thought I would tackle my own recipe. Maybe it was we both grew up in the mid-west but pot roast seemed to be a staple in my home as well. My mom made the most flavorful and tender pot roast - just another one of those things that I didn't appreciate as a kid. I don't make pot roast very often but if I would have known how easy it was - I think I would have made it a lot more often. I used a slow cooker to make my simple pot roast. It turned out super tender - like fall apart tender - and really delicious. It was a perfect Sunday afternoon lunch that smelled amazing when we walked in the door after church.
Pull roast apart with a fork. Ben and I loved this pot roast - our sweet girl - not so much. (Pretty sure it's because she didn't have the privilege of growing up in the mid-west.) It was super easy and really tender and flavorful. Not quite up to the standard of my mom's pot roast but not bad for a Southern transplant.
Ciao! Did you know that you can make meat loaf in a crock pot? If you did - you're one step ahead of me. I didn't even know crock pot meatloaf was even possible. Crock pot meatloaf - this opens up so many meatloaf opportunities for my meatloaf lovin girl. Slow Cooker Meatloaf 1 1/2 lb Ground Beef or Ground Turkey 2 Eggs 3/4 cup Milk 2/3 cup Bread Crumbs 1 tsp Salt 1/2 onions, minced 1/2 tsp Sage 1/4 cup Ketchup 2 tbsp Brown Sugar 1 tsp Mustard 1 tsp Worcestershire Sauce 1 1/2 lb Potatoes Shape into a loaf and place in the bottom of a slow cooker. Place potatoes around meatloaf. If you can get your family to eat cooked carrots - add a few of those too. (Then tell me how in the world you get your family to eat them.) :) Cook on low for 5 hours. Stir together ketchup, brown sugar, mustard and Worcestershire. Spread over meatloaf and cook on high for an additional 30 minutes. Slice and serve. Ooooo - the meatloaf possibilities are endless now. I just discovered my new favorite way to prepare my girls favorite meal. I hope that you give it a try.

Slow Cooker Honey Garlic Chicken
Cook on low 7 hours. Add beans and cook another hour. Serve with pan sauce. And just in case you were wondering if this chicken was tender and moist... So the first game of the season was FREEZING! (Literally) And just in case you were curious - my daughters team won 2-0. Shivering through the game wasn't too bad because we got to come home to this warm and delicious dinner. Ciao!
