Why is it that our taste in food changes as we get older? When I was a kid, I did NOT like sweet potatoes. Even though the name alone suggests that these orange hued vegetables are packed with "sweet" goodness, I found them utterly repulsive as a child. Both of my kids were equally opposed to sweet potatoes until fairly recently. My seventeen year old son is just starting to come around on his opinion of them and I've even caught him choosing a sweet potato over a white potato recently. (Proof that he is growing up way to fast.) I love roasted sweet potatoes and this sweet potato salad is a one of my favorite ways to eat them. Roasted Sweet Potato Salad 4 large sweet potatoes 2 Tablespoons rosemary 2 Tablespoons oil ½ teaspoon salt ¼ cup honey ½ teaspoon pepper 3 Tablespoons white wine vinegar 2 cloves garlic Coat a roasting pan with pam. Cube potatoes and toss with 1 T. oil.
Transfer warm potatoes to a serving bowl and add dressing. Toss gently. I used to make this sweet potato salad every year for Thanksgiving. One day it occurred to me that it was way to good to eat only once a year so I started to make it more often. I like to eat this warm but it's equally good cold out of the frig and even at room temperature.

I don't really remember which restaurant the ad was promoting (maybe Chilis?) but the song will forever be etched in my brain. My daughter absolutely loves ribs. I should really make them more often because they're quick to prepare and super delicious. I started this batch of ribs in the morning and by dinnertime - they were perfect.
Remove ribs from brine. Pat dry with paper towels. Combine spice rub ingredients. 2 Tablespoons brown sugar 1 ½ teaspoons cumin 2 teaspoons salt ½ teaspoon dry mustard 2 teaspoons paprika ¼ teaspoon allspice 2 teaspoons chili powder ¼ teaspoon red pepper 1 ½ teaspoons garlic powder
My suggestion is that you leave the house for the next 8 hours because the smell of these ribs cooking in the crock pot made me REALLY hungry. I served these ribs to my parents on their last trip through Atlanta. Everyone really liked them and even though they look like they are super spicy - they're really not - just flavorful.
Ciao! Trout Tacos 1 egg 1 Tablespoon milk 1/2 cup cornmeal 2 Tablespoons flour 1/4 teaspoon pepper 4 rainbow trout filets 4 teaspoon olive oil 15 ounce can southwestern black beans 8 corn tortillas 1 cup shredded lettuce 1/2 cup salsa 1/4 cup minced cilantro
Cut trout into pieces and serve with tortillas, beans, cilantro, lettuce and avocado. It is nearly impossible to take pictures of tacos because I can't hold the taco and the camera at the same time. These were the best pictures that I could get with only 2 hands. Ciao!
I do realize that today is the 4th of May but since I don't normally post a new blog on Sunday, I decided to post my Cinco De Mayo blog post a day early. (This way you have plenty of time to get to the grocery store to buy the ingredients for this yummy Cinco De Mayo treat.) If you consider the fact that my family actually celebrated "Cinco De Dos" on the 2nd of May, posting my Cinco De Mayo recipe a day early, really isn't all that bad. I hope you enjoy this one. I needed a quick and easy dinner recipe that I could put together in under 30 minutes and this is what I came up with - grilled chicken nachos.
Warm until chicken is heated through and the cheese is melted. Sprinkle warm nachos with fresh cilantro and chopped tomatoes. Ben and I LOVED the grilled chicken nachos. The kids were not so enthusiastic about them. They commented that they tasted"Too Grilled" and "Too Smoky". Both kids picked out the black beans and tomatoes - no surprise there.
