Banana Cinnamon Chip Coffee Cake

It seems that no matter how many (or few) bananas I buy at a time, there are always the illusive two borderline overripe bananas sitting on my kitchen counter at the end of every week. 

My family prefers to eat bananas when they're slightly green and crunchy so as soon as the first dark spot forms on the yellow peel, it's rejected and labelled as "rotten".  My attempts to convince them that brown bananas have converted their carbohydrates into sugar and therefore taste sweeter, has fallen on deaf ears.

I take it upon myself to make sure that the deliciously sweet and perfectly ripe bananas don't go to waste.  I make it my mission to disguise them and turn them into something great so I can trick my family into unknowingly consuming the very bananas that they rejected.  (I'm very competitive.   lol)

Combining bananas, eggs, flour, sugar and a handful of cinnamon chips is a simple idea but it's oh so delicious.  This recipe has no butter or oil but it's one of the moistest and most tender coffee cakes that I've ever had.   This cake really is the most delicious way that I can think of to use up those last two illusive overripe and blemished bananas.

Banana Cinnamon Chip Coffee Cake
2 very ripe bananas
2 large eggs
1 tsp. pure vanilla extract
1 ½ cups unbleached all-purpose flour
1 tsp. baking soda
2 tsp. ground cinnamon
1 cup granulated sugar
1 cup cinnamon chips
 
Topping:
3 Tbsp. granulated sugar
1/4 tsp. ground cinnamon
Mix together bananas, eggs and vanilla in standing mixer. 
Stir in flour, baking soda, sugar and cinnamon.

Stir in 3/4 cup cinnamon chips. 
Spread batter into a greased 9" pan.

Combine topping ingredients. 
Sprinkle over batter along with remaining 1/4 c. cinnamon chips.

Bake 35-40 minutes at 375.

I'm not sure how this cake got grouped into the "coffee cake" category because it really is a perfect little snack cake for any time of day.  I can tell you from experience that a piece of this fat free cake is a great little treat with a cup of afternoon tea. I think you will love it too.
