Turns out that sprinkling a little bit of Blackened Seasoning on a few shrimp is dinner perfection. I decided to put my blackened shrimp on a salad but I'm guessing that they would be equally delicious wrapped in a taco.
Blackened Shrimp Salad
1 tablespoon extra virgin olive oil
12 large shrimp, deveined, tails removed
1-2 teaspoons blackening seasoning
4 cups spring mix (or your favorite lettuce)
¼ cup black beans, drained and rinsed
¼ cup grilled corn
red bell pepper
Top with cooked shrimp, black beans, salsa, corn and avocado.
Place shrimp on salad.
These blackened shrimp would be delicious as a taco or even in a yummy soup. Give it a try and let me know how it turns out.
