There are just too many fun things to do in the summer that our dinner plans tend to take a back seat. Spontaneous trips to the pool, last minute kayak trips, ice cream runs or hiking trips - those are the things that make summer great. Sandwiches are the way to go for my family this summer. They are easy to make and most importantly - packable. I can put together a quick picnic and we can head off on another summer adventure. Friday night we met some friends in downtown Monroe for a live concert. (You know you live in a small town when they block off the streets, set up a stage at the end of it, sell popcorn and snow cones and everyone sets up their lawn chairs in the street so they can listen to the band.) Love my little Georgia town. It was a lot of fun and even though some of us ate dinner at home, I ended up taking a couple of sandwiches to the concert for the rest of my family who met up at the concert. These Carne Asada Steak Sandwiches are the way to go for a delicious summertime meal on the go. Carne Asada Steak Sandwiches 1 pound skirt steak 1 teaspoon cumin 3/4 teaspoon chili powder 1/4 teaspoon salt 1/4 cup mayonnaise 2 Tablespoons fresh cilantro, chopped 1/2 teaspoon lime zest 1 Tablespoon lime juice 1 clove garlic, mined 4 baguettes, sliced in half 1 avocado
Slice avocado and place on one half of baguette. Spread lime mayonnaise sauce over other half of baguette. Place sliced steak on sandwich. Enjoy. To my surprise, my WHOLE family gobbled these sandwiches up in no time. They were a big hit. Even my pickiest eaters were big fans - without the lime cilantro mayonnaise of course. These are definitely going to be a repeat meal on our summer menu.
