If you grew up in the 80's, you've probably had at least a couple of chocolate chip cookie cakes in your lifetime. The popularity of the cookie cake has faded over the years and I really don't know why because they're REALLY good. So I'm kickin it old school today and going back to my 80's roots with a recipe for a good old chocolate chip cookie cake. Yea! Chocolate Chip Cookie Cake 2¼ cups all-purpose flour ¾ teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 12 tablespoons unsalted butter, melted and cooled to room temperature 1 cup light brown sugar ½ cup granulated sugar 1 egg + 1 egg yolk 2 teaspoons vanilla extract 1 cup dark chocolate chips Preheat oven to 325 degrees. Grease a 9-inch round cake pan, then line the bottom with a round of parchment paper; set aside. Whisk the flour, baking powder, baking soda, and salt together in a medium bowl; set aside. Beat the butter and sugars together until thoroughly blended. ![]() Beat in the egg, yolk, and vanilla until combined. Add the dry ingredients and beat at low speed just until combined. Using a rubber spatula, stir in the chocolate chips. Turn the dough out into the prepared cake pan and use your fingers to press into an even layer. Bake until the cookie cake is light golden brown and the outer edges have started to harden, 25 to 30 minutes. Oh, the memories associated with cookie cake birthday cakes. I think it's time to bring these yummy cookie cakes back. Who's with me?
