Cinnamon Chip Loaf

Happy New Year!!! 🎉

What a year, 2022 turned out to be.  While most people spend time on New Year's Day recounting the highs and lows of the past year, I'm over here reminiscing about all the delicious food that I consumed in 2022.  😂  That's not unusual, right?  BUT, recording a picture of something that I made or ate for 365 days in a row and compiling it into a video... might be a little excessive.  🤣  So, for all of you NEVER asked what I eat every day - this one's for you.  ​
2022 was a very tasty year. 😅  Cooking and baking are 2 of my favorite hobbies and I'm thankful that I was able to spend a LOT time doing both of those in 2022.  Most of my cooking and baking was for other people but some of it, was just for me. This Cinnamon Chip bread was one delicious things that I baked (and ate) last year that was just for me.  And even though I made it for me - I did share it with my family.  🤣

Homemade bread is my kryptonite.  And homemade bread studded with sweet, cinnamon chips - ridiculous.  I had zero will power when it comes to resisting this amazing treat.  I toasted a slice and ate it for breakfast.  I cut another slice and nibbled on it with a cup of afternoon tea and then I smeared cream cheese over a slice and ate it for a late night snack.  FYI - it's good ALL day.  🤣

Cinnamon Chip Loaf
1 cup - 1 Tablespoon water
2 teaspoons vanilla
1 large egg
2 Tablespoons butter
2 Tablespoons malted milk powder
1 teaspoon cinnamon
1 1/4 teaspoons salt
1/2 teaspoon baking powder
2 Tablespoons sugar
3 cups flour
2 1/2 teaspoons instant yeast
1 cup cinnamon chips

Place all ingredients in bowl of standing mixer - except cinnamon chips.
Knead until you have a soft, smooth dough.

Knead in cinnamon chips. 
Place dough in a greased bowl.  Cover with plastic wrap. ​

Let rise 1 hour. 
Gently deflate the dough and form it into an 8" log.

Place the dough into a greased loaf pan.
Cover pan and let rise 1 hour.

Bake bread 40-45 minutes at 350.

Remove the bread from pan and let it cool completely before slicing.

Hershey's cinnamon chips can be a little tricky to find in the grocery store but you can order them on Amazon.  Trust me when I say that this bread is worth the effort that it takes to get your hands on the chips, though.  Enjoy!
