Sunday nights are a special time at our house. We're always trying to squeeze in just a little more fun in those last few weekend hours. Even as a kid, I can remember dreading the moment when the sun went down on Sunday night because that meant that the weekend was over. Now that I'm an adult, I find myself even more disappointed to see the Sunday night sunset. Sunday evenings are typically our time to reconnect and catch up with each other and I certainly don't want to miss out on family time while I'm off cooking dinner. That is exactly how our long standing tradition of Sunday "breakfast for dinner" got started. It was quicker for me to put together a simple breakfast meal than it was for me to get a big dinner on the table. Egg Pizza 2 cups flour 2 cups cheddar, shredded 2 ½ teaspoons baking powder ¾ cup milk 2 teaspoons sugar 2 Tablespoons milk ½ teaspoon salt 6 eggs, beaten ¼ cup butter sausage or bacon
Bake 5 minutes. A cheesy biscuit-like crust topped with buttery scrambled eggs and salty bacon? - yes please! Dinner is served.
