We have a longstanding tradition of eating breakfast for dinner on Sunday nights. There are exceptions of course, but for the most part - we all look forward to Sunday night breakfast.
We normally make eggs, pancakes or waffles for Sunday dinner but this week we decided to spice things up with pancake puppies. The inspiration for this idea came from an order of Pancake Poppers that we ordered recently at Dennys. They were really good and I knew the minute that I tasted them that they were definitely something that I wanted to recreate at home.
Not only did we recreate these delicious little gems - we took it one step further. Turns out, they're even better when you drizzle them with chocolate sauce. (Just a suggestion Dennys.)
1 cup Aunt Jemima Pancake Mix
1/3 cup milk
1 teaspoon vanilla
1/4 cup sugar
1 Tablespoon cinnamon
2 cups oil
Heat oil in deep skillet. Drop Tablespoonfuls of batter into hot oil. Turn dough balls over when browned.
Drain puppies on paper towels and then dredge into cinnamon sugar mix while warm.
If you want to upgrade your pancake poppers too - drizzle with chocolate.
Everything is better with chocolate - EVERYTHING!
