We have both kids under the same roof for the next 24 hours - and we're celebrating with pie!! Peach slab pie and homemade vanilla ice cream sounded like a pretty good way to commemorate our family reunion. Traditional pie can be a little time consuming so I opted for a little less labor intensive version of the my favorite peach pie - peach slab pie. Made in a jelly roll pan - this pie is easy to put together and suuuuper delicious. Peach Vanilla Slab Pie 1 recipe pie dough 12 cups ripe peaches, peeled and sliced 1 1/3 cups brown sugar 3 Tablespoons cornstarch 1 Tablespoon vanilla extract 1 teaspoon cinnamon 1/4 teaspoon salt 1 egg yolk
Spoon peach mixture over dough.
Whisk together egg yolk and 1 teaspoon water. Brush over dough lattice. Bake 50 minutes at 375. Slice. Just go for and it and top it with a scoop of vanilla ice cream. I really don't need an excuse like having the kids home, to enjoy a piece of pie but I do live for these days when we're all together. (And a piece of pie makes the day even SWEETER.)
