We have both kids under the same roof for the next 24 hours - and we're celebrating with pie!!
Peach slab pie and homemade vanilla ice cream sounded like a pretty good way to commemorate our family reunion.
Traditional pie can be a little time consuming so I opted for a little less labor intensive version of the my favorite peach pie - peach slab pie. Made in a jelly roll pan - this pie is easy to put together and suuuuper delicious.
Peach Vanilla Slab Pie
1 recipe pie dough
12 cups ripe peaches, peeled and sliced
1 1/3 cups brown sugar
3 Tablespoons cornstarch
1 Tablespoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon salt
1 egg yolk
Spoon peach mixture over dough.
Whisk together egg yolk and 1 teaspoon water. Brush over dough lattice. Bake 50 minutes at 375.
Just go for and it and top it with a scoop of vanilla ice cream.
I really don't need an excuse like having the kids home, to enjoy a piece of pie but I do live for these days when we're all together. (And a piece of pie makes the day even SWEETER.) I will be posting the recipe for my homemade vanilla ice cream on the blog soon so be sure and sign up for my blog emails so you don't miss out on that recipe.
