Smoked turkey on the Big Green Egg has got to be one of my very favorite meals. I normally smoke a whole turkey but I recently found a recipe using 2 split turkey breasts which is a little more manageable than a whole bird. This is a recipe that you have got to try for yourself. The turkey is super tasty as a sandwich, it adds a delicious boost of protein to a healthy green salad and it's fabulous on it's own. Pulled Turkey Sandwiches 2 turkey breasts 2 cups wood chips 1/2 teaspoon cayenne pepper 4 Tablespoons butter Sauce 1/2 cup mayonnaise 1/3 cup cider vinegar 1 Tablespoon horseradish 1 1/2 teaspoons salt 1 garlic clove, minced 1 teaspoon pepper 1/4 teaspoon cayenne
Remove from heat, cover with foil and let rest 20 minutes. Transfer to a cutting board and shred turkey with hands. Add 1/2 cup juices from pan to turkey. Serve shredded turkey on whole wheat buns with the white barbecue sauce. Or, if you prefer to save on carbs - skip the bun. You can even boost the vegetable factor and serve the turkey over a be of lettuce. The four of us had LOTS of turkey for dinner and we still had plenty left over for lunches the rest of the week. I'm already thinking about my lunch this afternoon. Will it be a turkey sandwich or a turkey salad? Ahhhhh, the possibilities.
