These severe storms moving through Georgia today have me craving some serious comfort food. Rainy days = hearty, satisfying, cheesy sandwiches.
Since I very rarely eat ground beef anymore, I assumed my days of eating sloppy joes was over. Boy was I wrong!! I'd like to introduce you to the most delicious ground turkey sloppy joe that I've ever tasted. With chopped kale, sliced mushrooms and swiss cheese - I think these non-traditional sloppy joes are even better than their tomato based ground beef counterparts.
Turkey and Swiss Sloppy Joes
1 Tablespoon olive oil
12 ounces ground lean turkey breast
2 cups kale, sliced thin
1 cup chopped onion
1 Tablespoon chopped fresh thyme
1 teaspoon garlic powder
4 ounces cremini mushrooms, sliced
1 1/2 cups 2% milk
1 1 /2 Tablespoons flour
3/4 cup shredded Swiss cheese
salt and pepper
4 whole wheat hamburger buns
