I am a big fan of warm sandwiches. It doesn't matter if its a panini, a wrap or a sub sandwich from Subway, I prefer warm sandwiches over cold ones. Give me some warmed deli meat with a slice of melted cheese and some crisp vegetables and I'm a happy girl.
I love a good panini but since I don't have (or really want to store) a panini maker, I have to get creative with my warm sandwiches at home. I created this yummy turkey melt panini in my waffle iron. It's a delicious hearty sandwich that is easy to make at home - and it's warm!
Turkey Melt Panini
8 slices turkey bacon
3 Tablespoons mayonnaise
1 teaspoon dijon mustard
8 slices whole grain bread
4 slices colby jack cheese
8 apple slices
8 ounces deli turkey
Preheat waffle iron. Cook bacon on stove until crispy. Combine mustard and mayonnaise in small bowl. Prepare remaining ingredients while bacon cooks.
Spray lightly with cooking spray and place on warmed waffle iron for a few minutes.
I liked the crunch and tartness of the apple in my sandwich but the kids both thought it was a little "weird". Either way - this was a really good WARM sandwich.
