Summer is here which means that I get extra help in the kitchen with dinner. Each of the kids choose (or sometimes, they get assigned) one night a week to prepare dinner. It is up to them to come up with a menu and get me a list of ingredients at least a day in advance so that I can get to the grocery store to pick up all the necessary supplies. (They usually come up with very creative menu ideas.) My daughter's very first meal of the summer was turkey parmesan meatball subs. The recipe came from iowagirleats.com and it was originally called chicken meatball parmesan subs. But, for the second time in two weeks, I went to the supermarket in search of ground chicken and I couldn't find any!? Not sure what is going on with the ground chicken supply but I have been substituting ground turkey instead. Turkey Parmesan Meatball Subs 1 small zucchini, grated 2 garlic cloves minced 1lb 99% fat-free ground chicken breast 1/2 cup panko bread crumbs 1/3 cup grated parmesan cheese 1 egg 1/2 teaspoon dried basil 1/2 teaspoon salt 1/2 teaspoon pepper Hoagie rolls or hot dog buns 4oz mozzarella cheese, sliced 3/4 cup marinara sauce, warmed Preheat oven to 400 degrees then spray a baking sheet with nonstick spray and set aside. Grate zucchini and garlic in cuisinart. Transfer to a bowl along with remaining ingredients and mix with hands.
I would say that her first dinner of the summer was a success. It was delicious. As an added bonus, I think she learned a new recipe that she could make independently next time. Ciao!
