I cant believe how fast last week flew by. A root canal, a homecoming parade and dance, SAT test, football game, soccer practices and over 25 dozen cupcakes later - it's no wonder, I didn't get the chance to pick up my book and read all week. This week is not looking any less busy but I am sure looking forward to it. I've got some challenging catering jobs scheduled for this week that will definitely take all of the creative juices that I can muster. I love a challenge and I especially love tapping into the creative side of my brain to create unique cake designs. (You can follow my instagram to see how my cakes from the weekend turn out.) Since I have a lot on my plate for the week already, I've tried to simplify the dinner menu just slightly. Let's face it, after I've spent all day in the kitchen baking cookies, the last thing I want to do is spend an extra 2 hours cooking dinner. Monday: Chicken Poblano Tortilla Soup I have been wanting to make this soup for weeks but just haven't taken the time to make it so this is the week that I will finally make this yummy soup. I'm super excited. Tuesday: Butterflied Chicken This was also a recipe that I was supposed to make last week but I didn't get to it soooo I pushed it off to this week. Here's hoping that I get a chance to make it this week. Wednesday: Stromboli I've got leftover lunchmeat from a party that we hosted on Sunday night and this is a GREAT way to use up leftover lunchmeat. Thursday: Carne Asada Friday: Macaroni and Cheese Saturday: Turkey Chili Using up the leftover chicken from Tuesday nights dinner. Have I mentioned how much I LOVE using my crock pot for easy weekend meals? Sunday: Pumpkin Pecan Pancakes Just because its Fall and I love pumpkin recipes. With any luck - I will be able to stick to it and we'll be eating delicious Fall foods all week. (Even if the weather doesn't cooperate.)
