I can't really remember where I first saw this snowman cheeseball but I have made one every year since I stumbled on the picture of this irresistible appetizer. This is my cheeseball recipe but you could certainly substitute your own favorite recipe. Cheese Ball 3 ounces cream cheese 1 Tablespoon wine 2 Tablespoons butter 3 Tablespoons onion 8 ounces cheddar cheese 1 teaspoon red pepper 2 Tablespoons milk Cover both cheeseballs with a thin layer of whipped cream cheese. To decorate the snowman add:
These snowmen are so cute that your guests may be hesitant to eat him. Be bold and be the first to sample the snowman cheeseball. Serve him with your favorite crackers and watch him disappear.

I am very behind in my Christmas decorating this year. We bought our Christmas tree yesterday - came right home, put it up and started decorating - no time to waste. While we were decorating, we snacked on caramel chocolate covered pretzels - yum. These pretzels may just be my husband's favorite Christmas treat. I made a double batch this year (about 55) because I wanted some for my family and I needed to send some to a school party this week. They are fairly easy to make and they are really good. Chocolate Caramel Pretzels
It's fun to get creative and sprinkle pretzels with toppings. I've made hundreds of these chocolate caramel pretzels over the past couple of years and I still end up breaking a few in the process. My family loves to hang around the kitchen while I'm making these because they all want to be the first to get the inevitable broken pieces. My son assured me that chocolate caramel pretzels would helped him study for his upcoming finals. (Not sure I bought that argument.) I packed up some of the pretzels to send to school and the ones that didn't get packed or eaten tonight, I will save for Christmas. I better hide them.
Ciao! Opening presents on Christmas morning is a tradition in our house. I know that some families start their present unwrapping on Christmas Eve and my kids are always trying to convince me to start a day earlier. I am big on traditions though and I am sticking to our plan of Christmas morning unwrapping. I am excited that we have family coming to our house for Christmas this year. Having extra guests in our house on Christmas morning means that we will get to enjoy an extended present opening time. You can imagine that my kids are not interested in eating breakfast before we open gifts so I offer everyone hot coffee and some simple snacks to munch on while we open presents. I make a big breakfast for everyone to enjoy after all of the gifts have been opened on Christmas morning. The perfect Christmas morning treat - biscotti. I have several different biscotti recipes - Chocolate Amaretto, Almond, Cranberry Pistachio and Cherry Almond Biscotti. I made a batch of the Cherry Almond Biscotti last week to freeze and save for Christmas. These crispy cookies are loaded with crunchy almonds and tangy dried cherries. We eat them for breakfast and then snack on them throughout the day. Cherry Almond Biscotti 3 eggs ¼ teaspoon baking soda ½ cup butter 1 cup dried cherries 1 teaspoon almond extract (or cranberries) 3 2/3 cup flour 1 cup whole almonds ½ teaspoon baking powder
Combine dry ingredients and add to butter.
These biscotti cookies freeze really well. I packaged mine into gallon size freezer bags and put them in my freezer to save for Christmas morning. They are really good with a cup of coffee or hot tea. They are a perfect little snack to eat while everyone opens up their presents from under the Christmas tree.
Ciao! Caramel Pecan Tarts may very well be my favorite holiday dessert. I LOVE them. Apparently I'm not alone because I get lots of requests for this buttery, nutty dessert. I ended up tripling the recipe and making 3 tarts so the quantities in my pictures wont reflect the recipe exactly. Caramel Pecan Tart 3 ½ cups chopped pecans ½ cup brown sugar 2 cups flour ½ cup honey 2/3 cup powdered sugar 2/3 cup butter ¾ cup butter 3 Tablespoons whipping cream
Drizzle cooled tart with melted chocolate. To make mini tartlets, I divided the flour/butter mixture between 24 greased muffin cups and bake for 10 minutes instead of 20. I double the amount of filling and I spoon that over the crust. I put them back in the oven to bake for 15 minutes.
I was walking around my yard last week and I was quite surprised to see green chives still growing in my garden. I was so excited about my discovery that I decided to make Lemon Chive Chicken before all my chives get killed by a frost. The deer have done a good job of keeping them pruned back this year but I still had enough chives to cut and use in my dinner. Lemon Chive Chicken Sauce Chicken 1 medium shallot, minced 4 boneless skinless chicken breasts 1 teaspoon flour 2 teaspoons salt 1 cup chicken broth 1 Tablespoon oil 1 Tablespoon lemon juice 2 Tablespoons butter 1 Tablespoon fresh chives, minced 1 Tablespoon flour 1 Tablespoon butter 1 teaspoon cornstarch salt and pepper 1/2 teaspoon pepper
Serve chicken with pan sauce. I love this oven to skillet method of cooking chicken. It never fails to produce really tender and juicy chicken breasts. I use it for all different kinds of recipes. This might just be the perfect meal for a cold December night.
