Are you more of a glamper or a camper?🤣 I'll let you guess which I prefer but I will tell you that I like to have a bed to sleep in instead of the ground.😅 (I also appreciate the convenience of a bathroom.) Don't get me wrong - there are some aspects of camping that I really enjoy. The hiking - the outdoors - the campfires - the food.🏕️ Doesn't everyone love s'mores?😅 Here are a few pictures from a hike that we took in Gatlinburg with friends, a few weeks ago. It kind of looks like I'm a camper - doesn't it?🤪 We played the part of hikers/campers during the day but... we retreated back to our comfy treehouse rental beds and kitchen after our day of hiking adventures. 😅 We didn't get the chance to do any outdoor cooking on this trip but it's not because I don't enjoy cooking outdoors. Why does all food taste better when it's cooked outside, on a fire, in the woods? Does it really have better flavor or is it just the experience of consuming it al fresco? I think we can all agree that everything tastes better when it's cooked over a campfire. 🌽🌭🍔🥩🍗 Striking the delicate balance between making a delicious camping meal in the woods and preparing something that's practical is not always easy. Let's face it - it's not easy to pack all of the necessary ingredients, condiments, tools and equiptment that it takes to make hamburgers over the fire. Am I the only person who doesn't ever remember to pack a spatula? I'm pretty sure that you don't want to hear any camping tips from me but I can give you a super easy campfire meal idea. These Shrimp Boil Foil Packets can be assembled at home, kept in a cooler and put right on a grate over a campfire to cook. To make things even easier, open them up and enjoy it right out of the foil "bowl". #nospatulaneeded🤪 I can't think of anything easier than these self contained meals and ... they're delicious. Oh, and if you're not a camper - you can cook them on the grill or even in an oven. Grilled Shrimp Boil Foil Packets 1 pound small red potatoes 10 Tablespoons butter 1/4 teaspoon salt 1/4 teaspoon pepper 1 1/2 pounds shrimp, peeled 3 ears corn, husked 8 ounces chicken sausage, sliced 1/2" thick 2 Tablespoons Old Bay seasoning 4 cloves garlic, minced 1 Tablespoon lemon juice 2 Tablespoons fresh parsley, chopped
Carefully open packets and sprinkle with fresh parsley. Ciao!
