I am a big fan of warm sandwiches. It doesn't matter if its a panini, a wrap or a sub sandwich from Subway, I prefer warm sandwiches over cold ones. Give me some warmed deli meat with a slice of melted cheese and some crisp vegetables and I'm a happy girl. I love a good panini but since I don't have (or really want to store) a panini maker, I have to get creative with my warm sandwiches at home. I created this yummy turkey melt panini in my waffle iron. It's a delicious hearty sandwich that is easy to make at home - and it's warm! Turkey Melt Panini 8 slices turkey bacon 3 Tablespoons mayonnaise 1 teaspoon dijon mustard 8 slices whole grain bread 4 slices colby jack cheese 8 apple slices 8 ounces deli turkey Preheat waffle iron. Cook bacon on stove until crispy. Combine mustard and mayonnaise in small bowl. Prepare remaining ingredients while bacon cooks.
Spray lightly with cooking spray and place on warmed waffle iron for a few minutes. Enjoy. I liked the crunch and tartness of the apple in my sandwich but the kids both thought it was a little "weird". Either way - this was a really good WARM sandwich.

Most days, I only cook for three people - you would think we could all agree on a single meal. Ummm yea ... no. The three of us can't even agree on the best way to eat a taco. I like lettuce wraps, Ben likes soft tacos and Courtney likes hard taco shells or taco meat with chips. Anyone else out there feel like its an impossible task to cook one meal that makes everyone happy? I've got at least one meal for you that just might please your entire family. My turkey tacos make all three of us happy. Ben eats his turkey tacos in a soft tortilla shell. I get to have mine in lettuce cups. And Courtney can have her tacos with crunchy multi grain chips. One dinner - three different ways. It's a win - win -- win. Three Way Turkey Tacos
Heat oil in skillet. Brown turkey. Add green chilies, salsa and taco seasoning. Cook 3-5 minutes. Stir in beans, corn and cilantro. Heat through. Here is where you can get creative. I like to just put the pan of taco meat on the table and let everyone fix their own taco exactly the way they like it. One meal. Three happy eaters. One happy momma.
Ciao! My goal for this week is to eat better. I seem to be "winging it" a lot more than usual lately when it comes to meal time. I'd like to blame it on Courtney's crazy soccer schedule but I refuse to use that as my excuse any more. I made a conscious effort this week to make a more specific meal plan and more importantly - to stick to it. Getting more vegetables and lean proteins into our diet were top priority on my "eating better" plan. Unfortunately my plans to eat healthier this week didn't translate to more hours for meal preparation. I still have to work around everyone's schedules, which meant that I had to seek out recipes that were healthy and also quick and easy to prepare. Skillet chicken with seared avocados to the rescue. This meal is easy to fix, it's super tasty and since it's all prepared in one skillet - it's easy to clean up too. Skillet Chicken with Seared Avocados 1 Tablespoon olive oil 3-4 chicken breasts 1/2 teaspoon kosher salt 1/2 teaspoon pepper 1 teaspoon paprika 2 small avocados 1/2 teaspoon sugar 1 medium red onion 4 green onions 1 poblano pepper 1 lime, juiced 1 Tablespoon soy sauce 1 Tablespoon sour cream Heat oil in skillet. Sprinkle chicken with salt, pepper and paprika. Add chicken to pan and cook 4 minutes. Turn and cook 1 minute longer. Remove chicken from pan. Wipe skillet with paper towels. Cut avocados in half. Sprinkle with sugar. Place, cut side down in pan. Cook 2 minutes. Remove from pan. Slice onion into 1/4 inch rounds. Spray pan with cooking spray and place onions in pan. Cook 3 minutes. Turn onions. Separate into rings. Add green onions and sliced poblano. Cook 3 minutes. Stir in lime juice and soy sauce. Nestle chicken and avocados into onion mixture. Place pan in oven and bake 7-10 minutes at 450. I love avocados and I didn't know how I'd feel about a seared avocado but I really liked it. I love the little crust that forms on the fruit as the sugar caramelizes and I really liked them warm. Who knew? Here's to healthy eating for today and for the rest of the week.
Ciao! Friday night is pasta night. (Yes, I am THAT predictable.) It's not always easy to squeeze dinner into our Friday night activities which is exactly why I like to go the pasta route. It's quick, it's easy and most importantly - it's carbs - so it's delicious. Try my super simple One Pot Baked Penne with Sausage and Spinach out on your family tonight. I'm betting that they'll love it. One Pot Baked Penne with Sausage and Spinach 8 ounces sweet Italian sausage 3 cloves garlic 28 ounces tomato sauce 15 ounce can diced tomatoes 3/4 teaspoon salt 1/2 teaspoon oregano 1/2 teaspoon salt 1/8 teaspoon red pepper flakes 3 cups water 12 ounces penne 6 Tablespoons fresh basil 6 cups fresh spinach, chopped 1 1/2 cups mozzarella 1 cup Parmesan 1 cup ricotta cheese
Place pot under broiler and broil until cheese begins to brown. Add a couple of whole grain bread and a green salad and Friday night dinner is served. Enjoy this beautiful weekend friends.
Ciao! I love finding new recipes and I certainly don't shy away from crazy complicated recipes with obscure and rare ingredients. I love a challenge but there's also something great about a simple, uncomplicated meal. There are days when I like to make complex recipes and there are days when I crave the simple. So for those of you who like simple meals that are easy to prepare with easy to find ingredients and still taste delicious - this recipe is for you. Clearly my family is partial to the more simple meals because when I served this Chicken Ranch Roll Up they said "you should make this more often" and "THIS is delicious." (I rarely get that kind of response to meals that take me all day to prepare. - Lesson learned.) Chicken Ranch Roll Ups 1 package crescent rolls 2 Tablespoons ranch dressing 1/2 cup shredded or sliced cheese (I used colby jack) 1 cup shredded or thinly sliced chicken
Let cool 5 minutes then slice. Serve. This recipe would be perfect for college students who are living in apartments on campus --- Ryan Davis. (Was that subtle enough?) ANYONE can make this yummy chicken roll up and if you start with a Rotiseree chicken - it will be even easier.
